Combine all ingredients in a large bowl, leaving room for expansion since the mixture will rise.
Stir to combine; it's OK if mixture isn't perfectly smooth.
Cover with plastic wrap, and let rest at room temperature for 1 hour; the mixture will begin to bubble. You can cook waffles at this point, or refrigerate batter overnight and cook waffles the next day.
Preheat waffle iron. Spray, if needed. Pour 1/2 to 3/4 cup batter onto the center of the iron. (Do this according to manufacturer's directions). Close the lid. Bake for recommended amount of time until waffle is golden brown. It took mine about 12 minutes.
