Classic Ham pineapple pizza uses ham, pineapple slices and mozzarella cheese. Otherwise known as Hawaiian pizza, it has a definite Hawaiian flare to this special pizza!
Preheat oven to 350° F / 177° C. Place Coconut on cookie sheet and spread to a single layer. Toast 5 – 8 minutes, do not over brown as it will brown again on top of pizza. Remove and set aside.
For Coconut Sauce
Saute garlic until lightly browned.
Add 1 1/4 c. coconut milk, the pineapple juice (use juice from can of pineapple), lime juice, sugar, hot sauce, to taste and salt.
Mix the other 1/4 c. coconut milk with corn starch. Whisk together.
Heat Coconut/ Juice mixture on low heat until almost boiling. Whisk Coconut/ Corn Starch mixture into the sauce. (If cornstarch falls to the bottom after a few minutes, just whisk it again.) Heat on low heat, stirring occasionally until thickened.
Grill Pineapple and Pepper, until lightly charred, set aside.
Grate Mozzarella. Chop Chives
Halve Pizza Dough. Roll out pizza dough into 2 6″ rounds. top with about 1/4 c. of Coconut Sauce
Add Ham, pineapple, pepper, toasted coconut, chives and mozzarella to top of crust.
Bake at 450° F / 235° C. for 15-18 minutes until desired brownness. Let rest 5 minutes before cutting into slices.
