Irish Colcannon

potatoes

Instructions
Peel potatoes. Barely cover with water in a medium saucepan. Bring to boil. Reduce heat and low boil, until tender.
Crisp up 3 slices bacon.
Slice about 1/4 of a small cabbage. About 2 cups.
Drain potatoes, when soft.
In same pan, add butter, cabbage and green onion. Saute until soft.
Rice potatoes, or mash with potato masher, with milk.
Once cabbage is soft, add that and bacon and milk to mashed potatoes. Mix lightly. Salt and pepper to taste.

Cook potatoes until tender, but not mushy.
Use potato ricer, potato masher or mixer to mash potatoes.
Best using unsalted butter.
