1 3/4cupsbuttermilk (plus 1/4 cup for brushing over biscuits.)Make your own using, 2 Tbsp lemon juice or white vinegar, then fill with milk to make 2 cups
If making your own buttermilk add 2 Tbsp. lemon juice or white vinegar to measure cup. Add enough milk to equal 2 cups. Let sit until ready to use.
Prepare peaches, drizzling with lemon juice as you cut them to prevent browning.
Add spices and cornstarch and combine.
Spray 12" cast iron pan or a 11 x 13" baking dish with cooking spray.
Pour in peaches.
Place peaches in oven for 10 minutes, until the biscuit dough is done. About 10 minutes.
Mix Baking mix, buttermilk and sugar well in a separate bowl. Carefully remove peaches out of the oven. Place spoonfuls of batter directly over the peaches.
Brush biscuits with remaining buttermilk. Sprinkle cinnamon sugar, liberally over biscuits.
Bake for 35-40 minutes until biscuits are golden brown and peaches are bubbly.
