How to clean pumpkin seeds

Once you remove the seeds from the body of the pumpkin, you are left with a pile of gooey stuff, technically known as the endocarp, and a bunch of seeds. The best way I have found to clean the seeds from the endocarp, is to manually strip the seeds. Many sites are suggesting soaking the whole mess in water first. Do you know what that accomplishes? Nothing but a huge, wet, slimy mess! It’s far less messy to just pull the seeds off first. Then wash the seeds.

Allow the seeds to dry thoroughly, before roasting.
How to make roasted pumpkin seeds
- Scoop seeds from pumpkin.
- Manually pull seeds from the endocarp. Discard.
- Place seeds in colander.
- Rinse thoroughly.
- Dry on baking sheet covered with paper towel.
- Once dry, place in bowl and toss with olive oil and salt.
- Place on baking tray, spread out evenly.
- Toast for 10-15 minutes, until golden brown.

Ingredients
- 1 cup pumpkin seeds
- 1 tsp Olive Oil
- 1 tsp Salt
Instructions
- Remove seeds from pumpkin.
- Separate seeds from the endocarp (gooey stuff).
- Place seeds in colander.

- Spread on paper towel and allow to dry.
- Place in bowl and toss with oil and salt.
- Bake at 350°F for 15 minutes, until golden.
